Scramble eggs



Simple Supper when you in a hurry



Well this morning after every one had left for the day, I starting thinking about how families manage to eat well with being rushed and the rising cost of food everywhere today.
I think it must be easy to fall into the trap of quick ready made process food , which could be frozen pizza or picking something up at the grocery store on the way home from work.
I have never been a fan of process food in any form and take out is so salty and expensive that I would much rather keep a few staple recipes in my  arsenal for those times that life gets crazy or I'm not around and the boys are cooking dinner.
Perfect scramble eggs with fresh herbs (herbs can be what ever you might have from parsley to chives or nothing at all) with toast with butter ( our favorite is sour dough but whatever you have is always perfect) Add some fruit or sliced tomatoes and dinner is served.
This meal takes no more than 15 minutes to put on the table, and you will feel like you provided a healthy and delicious meal for your family ( or yourself).  The bonus will be that your grocery and takeout cost will be lower.

6 large eggs - I like 2 eggs per person
pinch of salt and black pepper
butter - about a tablespoon
chopped herbs - about tablespoon or so


Crack eggs in bowl
add your salt , pepper and herbs
beat with fork until fluffy
add 1/2 butter to non stick pan on low heat
melt butter slowly
pour eggs into pan,
using wooden spoon stir eggs until cooked add the rest of the butter chopped in tiny pieces,
don't over cook, they can be a little soft when you take them out they will continue to cook.
serve with butter toast and fruit and dinner is served.
